HuliHuli Seasoning, Recipe

On January 28 and February 28, Hiroko posted about the various seasonings. Among the seasoning, Dashi Soy is made with soy sauce, dried mackel and bonito powder, rice wine and monosodium. Sprinkling Dashi Soy over the any boiled vegetable make very tasty. Hiroko was told this is very expensive seasoning, so wasting to make soaking sauce for Teriyaki chicken. However, Hiroko had already made Teriyaki chicken with Dashi Soy. The recipe was posted in the article called “Fermented seasoning” on January 28.

HuliHuli is made with soy sauce, sugar and ginger. Hiroko tried to make many dishes using HuliHuli requested by one of Hiroko’s blog readers.

Teriyaki Chicken with HuliHuli (no photo)
1 ½ lb. boneless and skinless chicken thigh
Make sauce with:
½ cup HuliHuli
½ tsp salt
½ cup sake or wine
Soak chicken in the sauce over night, then barbecue or broil
It was good. Hiroko’s family members ate this.
Some Hawaiian Japanese prefer to add orange juice.

Kara-age chicken

Coat corn starch on the soaked Teriyaki chicken and fry ½ inch deep oil
Everyone likes this chicken. It was very tasty.


1 lb. Skinless and boneless chicken breast – cut-up in small pieces
Cook in the same sauce of the Teriyaki chicken
½ cup of HuliHuli, ½ tsp of salt and ½ cup of sake or white wine
Hiroko’s family members did not enjoy this dish because it was too Japanese taste.

Oyako-don - making with chicken (Oya-parents) and egg (Ko-kids), therefore Japanese gave this name for this dish

However, made Oyako-don with the left over dish was favored by Hiroko’s family
Add 1 cup chicken stock – make sure there are enough sauce
Add 1 small yellow onion – sliced
Boil the chicken and onion in sauce
Pour beaten 3 eggs over the chicken and onion sauce
Serve this chicken over the cooked rice

Chicken steak (4 people)

2 skinless and boneless chicken breasts – sliced thin in small pieces
Season with pinch of each pepper, garlic power, rosemary, red hot pepper, thyme, and cumin
Make frying pan hot and melt ½ tsp butter
Broil or fry the chicken in pan
Sprinkle HuliHuli over the chicken, and it added a little sweet taste. It was very tasty

Gyu (Beef) Don (bowl)

1 lb. small pieces beef
½ tofu – cut small pieces
1 carrot – thin sliced with peeler
Pinch - sea-weed (wakame)
Cook in the same sauce of the Teriyaki chicken
½ cup of HuliHuli, ½ tsp of salt and ½ cup of sake or white wine
Serve this cooked beef over the rice

Hot Buckwheat Noodle (No photo)
Add 2 cups of chicken stock to the left over Gyu-Don beef
Boil this soup
Pour the soup over the cooked buckwheat noodle
Everyone loved this noodle dish

Using Vegetable
Chinese Cucumber

1 cucumber, half skin off and cut into bite size
½ small onion, slice thin
Dressing: 1 Tbsp HuliHuli
1 Tbsp Rice Vinegar
½ sesame oil
Soak the cucumber in the dressing
It made everyone happy

Boiled Vegetables - Broccoli and carrot, or Spinach

Boil broccoli and carrot, then cut into bite size, or spinach with white sesame seeds
Sprinkle HuliHuli only
Both were very tasty

Seasoning is necessity to make any food tasty. Young people know how to use many different kinds of seasoning. Thanks to our nephew Steven and Dave to teach Hiroko how to use seasoning. Seasonings are very important for cooking

Jesus told Christians to be the salt of the world.
Matthew 5:13
“You are the salt of the earth. But if the salt loses it saltiness, how can it be made salty again? It is no longer good for anything, except to be thrown out and trampled by men.”
What did Jesus command us with this verse? What should we do to be the salt of the earth?
There may be answer to know how the salt does for food. Hiroko thinks using the salt for seasoning food, and preventing from spoil. As a Christian, Hiroko would like to think and meditate how and what kind relationship having with the world as salt.
